I am pre-diabetic and my hubby is an insulin-dependent diabetic.

We started eating vegan at the beginning of August after my hubby sat down with me to watch Forks Over Knives. I read the book a few years ago, along with Joel Fuhrman’s Eat to Live, and we did eat vegan for maybe two or three months but then got company for Christmas and went back to eating meat. My husband, a certified carnivore, was really convinced by the video.

His morning fasting blood sugar readings have been in the 70s this past week and he is bit by bit cutting back on his Lantus. I think he’s down to 58u twice daily. He also takes Januvia. I seldom check my blood sugar but do from time to time.

I am eating vegan because I don’t want to become a statistic. I started out at least 100 lbs overweight. I had to go on blood pressure meds earlier this year, and I don’t want to be fat and debilitated as I get older. I’m 58 and my hubby is 62. I want to be a healthy old lady and really enjoy my kids and grandkids!! My weight loss has been slow, about 5-6 lbs a month. I’ve been on diets where I’ve lost 15-18 lbs a month (and of course, eventually gained it all back and more besides), so I keep in mind I am now post-menopausal and not doing this just to lose weight but to be healthy.

I also want to eat to enjoy. Once in a great while, maybe twice a month, I will have a bit of cheese or a baked good with eggs in it, mostly when going out to eat. It isn’t easy to stay 100% vegan when eating out, but we make the best choices possible. So that’s our story for now.

Update (after the holidays): David is now down to 48u Lantus twice a day and has cut out his Januvia. He’s dong incredible! Did some cheating over the few days of Christmas celebration and had stuff with eggs and cheese but didn’t have any meat. David had a bit but not me.
